Pumpkin Cheesecake {recipe}

My art form this week has been baking. I enjoy baking when I have the time and a specific reason, and I had THREE specific reasons this week. Yes, my kitchen has been a disaster all week, but I’m very happy with how all of my desserts turned out.

{Pumpkin + cream cheese cupcakes for our community group fall festival. I won’t tell you what happened to them in the car on the way over there … let’s just say I was glad I took a picture beforehand.}

This recipe is so quick and easy and tastes delicious. In all honesty, it tastes more like pumpkin pie than cheesecake, but it does add a little creamier texture than traditional pumpkin pie. I’ll definitely be making this again for Thanksgiving.
P U M P K I N C H E E S E C A K E
Puree 1 c pumpkin, 8 oz. cream cheese, 1/2 c sugar, 3 eggs, 1/4 c each sour cream and maple syrup, 1/2 tsp cinnamon and a pinch of salt into a food processor or blender.
Pour into 9-inch graham cracker crust.
Bake at 350 until set, 45 minutes.
Serve with whipped topping.

Sundays are DEAD to me.
Last night was the premiere of one of our favorite TV Show – The Walking Dead. Around this time last year at the start of the season, I wrote a post How to Survive a Zombie Apocalypse. There’s some good tips in there you definitely need to read, because if you ask my husband the apocalypse is a very viable option.
To commemorate the occasion, we decided to host a small get together with some other zombie lovers. We had eyeball cupcakes, gummy body parts and even a 15-question trivia that I facilitated, complete with a zombie-themed prize. (Sample question: In season 3, which character kills a walker using a car trunk door?)
We screamed, we held our breath, we covered our eyes in disgust – it was definitely a successful premiere. And at the end of it all, we zombie-fied ourselves. It doesn’t get much better than that.

My Fall TV Guide
I love Fall. Who doesn’t? The weather, the comfy clothes, the pumpkin-flavored everything, but it also signals the start of something else – the return of Fall TV.
I’ll admit, I’m a little obsessed with my TV shows. If you watch any of the shows below, I’m always happy to discuss characters, plot lines, favorite episodes, etc. in as much detail as you wish.

life lately + blogging hiatus
Life lately has been busy, busy, busy. Along with moving and getting settled in I’ve had some big projects going on at work that have been taking up a lot of time (hint, hint: follow @Walmart on Instagram). I’ve had hardly any time to blog and when I have had the time, spending more time on a computer did not sound appealing.
Other than moving and working, see a few life lately highlights below.

Saturday we head off on our next adventure to Denver and Nashville. One day while drinking mimosas on a patio, husband and I dreamed a dream that we could see his favorite band (The National) in concert and mine (Taylor Swift) in the same week, despite the shows being across country. That dream has officially turned into reality.
We will see The National at the breathtaking Red Rocks Amphitheater outside of Denver and spend a few days in the city with my cousin and her husband. We then head to Nashville where we will meet up with my parents, and Mom and I will see T. Swift (for the second time because she’s amaaaaaazing). I am BEYOND excited and so ready for a week-long vacation.

{Labor Day Weekend} Huevos Rancheros
Ingredients:
Corn tortillas
Eggs
Black beans
Bacon
Additional toppings, optional:
Shredded cheese
Salsa
Jalapenos
Cilantro
Avocado
Sour Cream
1. Cook the bacon. Chop into small pieces.
2. While cooking bacon, warm the beans.
2. Brown the tortillas in the skillet, just a few seconds per side.
3. Cook eggs sunny side up.
4. Put beans as first layer on two tortillas, top with egg, then pile up the toppings!
And since it’s a long weekend, naptime after brunch is always a necessity. xo

The Woes of Moving; The Joys of a House
Some of you know we’ve been moving the past few weeks from our apartment to a house. I actually really enjoyed apartment living and so did husband, but then Olli changed everything. The apartment seemed to go from pretty nice size to way too small in days. With a 60lb dog running the apartment, we knew we couldn’t stay there much longer. Not to mention having to walk him up and down the stairs day in and day out to go to the bathroom.
That realization came parallel to us doing Financial Peace University, which caused a big decision – move into my parents house. My parents travel a lot for work and are only in their Bentonville home once every couple months or so. It sits empty at least 250 days out of the year. It’s rent free, it has a backyard and it allows us to save for our own house – need I say more?
While the house has been GLORIOUS, moving is always a four-letter word. Here’s some advice I have for any of you moving any time soon.
W O E S O F M O V I N G
1. Start packing early. I’ll say it again, start packing early. Especially all that little stuff that seems to be everywhere.
2. As you’re packing, seriously consider if you need it. If you haven’t looked at it since last time you moved, you probably don’t. Give it to someone who does.
3. Enlist your best friends to help you move. I say your best friends, because not just anyone wants to help someone move.
4. Afterwards, offer them free pizza and beer.
5. Put your dog in doggie day care or somewhere else for the day. They WILL be in the way.
6. Label your boxes. Especially if they’re going in a storage unit.
7. Buy plastic boxes at Walmart for things like photos and clothes that you’ll be storing for a while.
8. Don’t take a shower on moving day or try and look cute. You will get sweaty and gross and it won’t matter.
9. Stay hydrated. Moving.Is.Hard.
10. Remember the big picture – you will get through this and then you’ll have a nice house to go home to.
J O Y S O F A H O U S E
1. The backyard – oh my gosh having a backyard is nice. Case in point, the two photos below on this beautiful Saturday morning.
2. The feeling of a cozy neighborhood with genuine neighbors.
3. The space. Husband can be in one room, Olli can be in one room and I can be in another – and we won’t necessarily hear each other. *relaxing sigh*
4. You don’t have to carry your trash across the complex to the always overflowing and smelly trash compactor.
5. You don’t hear every word of every argument from your next door neighbors.
… and many, many more. I’m sure I’ll be blogging about it again soon so I’ll just leave it at these for now. Husband and I are off to get the final things out of the apartment and turn in our keys, then we will have a wonderful, relaxing Labor Day weekend in our home.

Fall Trend: Pastels
Typically August makes me yearn for Fall because it’s just so hot you want to die. But this year, it’s the opposite. It feels like Fall is creeping in early and it makes me eager for Pumpkin Spice Lattes, football, cozy sweaters and beautiful foliage.
As I’ve been reading up on Fall fashion in my magazines, one trend has stood out: pastels. Pastels for Fall?? I know, sounds strange, so I’ve put together a lookbook of some cute pastel images to inspire you for the upcoming season.
Tip: the key is to mix with autumnal colors like browns, greys and winter white

10 Things I Missed Out On in College by Not Going Greek
Currently our summer shows include Parks & Rec and Game of Thrones, but before that there was Greek. Greek follows a college freshman as he decides to go from geek to Greek, much to the dismay of his popular sister in a sorority. It’s funny, it’s heart-warming and it makes you very nostalgic for your college days.
While I wasn’t in a sorority, I learned from the show several things I missed out on by not being in the greek system, for better or for worse.
1. Secret/forbidden parties (especially those Great Gatsby themed in the basement)
2. Drama over rivalry houses
3. Crazy house mothers and b*tchy presidents
4. Sharing a bathroom with hundreds of girls
5. Hazing (including being duck-taped to a wall in the quad)
6. Annual spring break trips
7. Spending too much time and effort on functions/parties/competitions
8. Everything that rush entails
9. Shots from an ice luge
10. Buttoning yourself and your house up for parent’s weekend

The Power of One – The Warm Heart Co.
Remember how I said I was reading a book called The Power of One? It’s an inspirational story about how one person can make a difference. Well, I’m now seeing in my own life just how true that can be.
One of my oldest friends, Danielle, is one person making a difference in children’s lives in Malawi.
About Malawi:
Malawi is a landlocked country in southeast Africa, bordered by Zambia, Tanzania and Mozambique. The estimated population is 14.9M. The country is also nicknamed “The Warm Heart of Africa”.
Malawi is among the world’s least-developed countries. The economy is heavily based in agriculture, with a largely rural population. The Malawian government depends heavily on outside aid to meet development needs, although this need (and the aid offered) has decreased since 2000. The Malawian government faces challenges in building and expanding the economy, improving education, health care, environmental protection, and becoming financially independent.
Malawi has a low life expectancy and high infant mortality. There is a high prevalence of HIV/AIDS, which is a drain on the labour force and government expenditures. There is a diverse population of native peoples, Asians and Europeans, with several languages spoken and an array of religious beliefs.

Danielle has visited Malawi twice and in her words “it seriously rocked my world. I see everything different and left a piece of my heart over there! I sponsor 3 little girls through Children of the Nations, and I am so incredibly in love with them that I cannot even put it into words.”

Currently, 75% of the proceeds will go to sponsoring her 3 girls in Malawi, but she hopes she can eventually support other opportunities in the country, including The Thatch 210 Project, which is re-roofing huts in the Malawi.

Happy 1st Birthday, Olli!
I can’t believe our baby boy is a year old today. He’s just as crazy and just as cute as we he was when we picked him up last November.

NWA Brew Hop
Saturday night we had an adventure.
We set off with another couple to go Northwest Arkansas brewery hopping. You might be as surprised as I was to learn just how many craft breweries there are in the area. We went to 4 and there were 4 more we wanted to go to, so of course there’s already a brew hop round 2 in the works.
Here’s my review of the night and the brews!
Core Brewing and Distilling Co: A little sketchy, very small (though they’re expanding), located behind Northwest Arkansas Newspapers in Springdale. Not our favorite beer overall, but you can get a lot for cheap. A flight of everything currently on top (7-8 beers) for $6.
Favorite Brew: Raspberry Ale
Saddlebock Brewery: Awesome place, out in the middle of nowhere Arkansas, with a fantastic two-story deck to sit outside. Overall, best brews.
Favorite Brew: Arkansas Farmhouse**

Apple Blossom Brewing Co: Newest of the four and favorite atmosphere, indoor/outdoor seating and restaurant, unique decor. Along with our brews we also had amazing (and huge!) fried pickles and alfredo fries.
Favorite Brew: Gris Cast Wheat
West Mountain Brewing Company: Best thing about this place? It also has pizza and really really good pizza at that. In all honesty, we didn’t even drink at this one. All we wanted was pizza and a bed.

Book Reviews: From Gossip Girl to South Africa
Reconstructing Amelia – Remember when I wrote about wanting to read this book last time? Gossip Girl meets Gone Girl – and it did not disappoint. Though it didn’t keep me on the edge of my seat quite as much as Gone Girl and it wasn’t nearly as chic & conniving as Gossip Girl, it was somewhere happily in the middle and kept me thoroughly entertained.
Grade: A-
Don’t Worry, It Gets Worse – One TwentySomething’s (Mostly Failed) Attempts at Adulthood – Fact about me: If I’m not completely engaged in a book, I won’t finish it. I just feel like it’s such a waste of my time if I’m not really enjoying what I’m reading. All that to say, I did not finish this book. Maybe I had too high of hopes, thinking it was going to be the next Mindy Kaling or Tina Fey book (both of which I adored). It does have some similarities and I definitely could relate to some of it, but it was too long-winded with not quite enough wit to keep me reading. If you’re interested, stick with her blog: The Frenemy, but save your time with the book. {Though I did blog about her Advice for TwentySomethings, Post-College, which you should read}
Grade: N/A*
Soul Detox – I’m reading this book with a group of women at work and so far it has been amazing. The book examines the toxins that assault us daily including: toxic influences, toxic emotions, and toxic behaviors. It really forces you to dig deep and examine the toxins you personally deal with, how to deal with them and how to remain clean, pure and focused on God. Our group has had great conversation so far around the book and I’m looking forward to continuing it.
Grade: N/A*
The Power of One – This is next on my list and I hope to start it soon. Husband actually got this book as a gift for his birthday, but I’m stealing it while he’s reading Game of Thrones. In 1939, as Hitler casts his enormous, cruel shadow across the world, the seeds of apartheid take root in South Africa. There, a boy called Peekay is born. His childhood is marked by humiliation and abandonment, yet he vows to survive and conceives heroic dreams–which are nothing compared to what life actually has in store for him. He embarks on an epic journey through a land of tribal superstition and modern prejudice where he will learn the power of words, the power to transform lives, and the power of one. I love inspirational stories and I have a heart for South Africa, so I’m pretty excited. Review to come next time.

Good ol’ spaghetti {recipe}
Last night I had a really weird craving – spaghetti with a really good meat sauce. I’m not a big spaghetti eater. I’d typically rather have a light pasta with veggies and pesto. But for some reason last night was the exception. I also happened to be in a cooking mood, again – rare, so I found a recipe and whipped it up.
Ingredients:
1lb ground turkey
3 -4 garlic cloves, minced
1 (28 ounce) can diced tomatoes
2 (6 ounce) cans tomato paste
2 (15 ounce) cans tomato sauce
3 teaspoons fresh basil
1 1/2 teaspoons brown sugar
1 teaspoon salt
1/4-1/2 teaspoon crushed red pepper flakes
1/4 teaspoon fresh coarse ground black pepper
1/4 cup red wine (a good Cabernet!)
1 lb thin spaghetti
parmesan cheese
Directions:
In large, heavy stockpot, brown ground turkey.
Add garlic, tomatoes, tomato paste, tomato sauce and water.
Add basil, brown sugar, salt, crushed red pepper, and black pepper.
Stir well and barely bring to a boil.
Stir in red wine.
Simmer on low, stirring frequently for at least an hour. A longer simmer makes for a better sauce, just be careful not to let it burn!
Cook spaghetti according to package directions.
Spoon sauce over drained spaghetti noodles and sprinkle with parmesan cheese.
Serve with texas toast and a glass of that Cab!

This year is Husband’s golden birthday, turning 26 on the 26th (which will be my golden birthday too in a couple years!) So I decided to do something a little fun and asked everyone to bring something gold to his birthday dinner.
